About the Role:
An opportunity has arisen for an Outlet Manager to join the F&B team at Jumeirah Beach Hotel. Sous Chef is responsible to assist the Executive Chef / Chef de Cuisine in supervising and managing activities related to the kitchen including menu creation, management of kitchen staff, ordering and purchasing of inventory while ensuring smooth operations and high service delivery and quality standards.
The main responsibilities are:
Constantly being aware of the requirements from Executive Chef / Executive Sous Chef in day-to-day requirements following outlet’s operating concept and Jumeirah Group’s standards thus ensuring preparation of high-quality food. Work as a team, be courteous, professional, efficient, and flexible and perform routine duties as per below:
Prepare and cook high quality food according to menu guidelines and recipes and as per instructions received from Sous Chef or Chef De Cuisine
Follow correct hygienic food handling practices and restaurant’s regular cleaning and waste disposal practices
Assist Executive Chef / Chef de Cuisine to set service and food standards in compliance with the group’s policies, procedures, and quality standards
Communicate any issues arising within the section to the Executive Sous Chef and act any further directions given to ensure prompt solution to problems for the smoother operations of the kitchen
Assist the Executive Chef / Chef de Cuisine in the development of new menu ideas to ensure all menus are seasonal and creative using the finest ingredients and working within the brief
Manage staff training with the Executive Chef / Chef de Cuisine and maintain an active training plan/Programme for each team member. Make sure all practices that are trained are then followed
Implement approved departmental policies, processes, and procedures, and provide instructions to subordinates and monitor their adherence so that work is carried out in a controlled and consistent manner while delivering a quality service to guests and maintaining standards of excellence
Motivate subordinates and contribute to the identification of opportunities for participating in change Initiatives, Programmes and Projects considering best practices, improvement of processes and productivity improvement
Keeping up to date with industry trends, new techniques, and culinary innovations
Optimize the use of restaurant resources: food, energy, labour, water
Maintain a high standard of personal appearance and hygiene
Develop and maintain positive working relationships with others; support team to reach common goals
Ensure that the designated section, equipment, and utensils are always kept clean and tidy to the standards required by the Restaurant
Ensure all cleaning schedules are being followed and completed to the required business standard
Supervise and check every dish sent from the section to ensure adherence to the kitchen quality standards
In the absence of senior chefs and ensure daily kitchen records and labelling standards are being always maintained and all set standards and quality procedures are adhered to
Perform related tasks and duties as assigned and deemed responsible by management
Adhere to all relevant Health, Safety and Environment procedures, Fire and Safety instructions, controls, and audit requirements in compliance with HACAP and Jumeirah standard operating procedures so that Jumeirah Group provides world class and luxurious hospitality services to its guests
Perform related tasks and duties as assigned and deemed necessary
The ideal candidate for this position will have the following experience and qualifications:
College Degree in Culinary Arts or similar from an accredited Culinary School.
Completed full kitchen apprentice and chef’s training courses.
At least 5 years of relevant experience, including a minimum of 2 years as a Sous Chef with a luxury international hotel.
Proven commercial kitchen experience.
In-depth knowledge of Turkish or Levantine cuisine.
Ability to conduct food tastings to ensure quality and consistency.
